Early Bird Cupcakes

These aren’t your momma’s cupcakes. Oh no! These are cupcakes you want when you have a hankering for bacon… Or pancakes… Or maple syrup… OR BACON! So here it is, the ultimate “breakfast” cupcake!

Here’s what you’ll need to make about 12-16 cupcakes:

  • 2/3 cups of butter at room temperature
  • 1 1/4 cups of sugar
  • 3 eggs
  • 1 1/2 teaspoon of maple extract (or 2 tbs of a good quality maple syrup, if you have it)
  • 1 teaspoon of vanilla extract
  • 1 1/2 cups of all-purpose flour
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 2/3 cup chopped pecans
  • 4 slices of bacon, chopped into small pieces
  • 2/3 cup of milk

Alright lets get to work,

In a medium sized bowl sift together your flour, baking powder, and salt. Set it aside.

In a large bowl, cream together your butter and sugar until fluffy. Then beat in your eggs one at a time, make sure you mix in each egg well before adding the next egg. Once all your eggs are well combined, mix in your maple extract (or maple syrup if you have it), and your vanilla extract.

With your mixer on medium speed, begin to add in the flour mixture and the milk a little at a time. Alternating from flour and milk.

Mix your pecans and bacon pieces into the batter, WITH A SPOON. You don’t want to over mix the batter, it would make a dense cake, instead of a fluffy cupcake.

Fill your lined cupcake pan about 2/3 of the way up. And bake in a pre-heated 350 degree oven for about 20-25 minutes. Or until a toothpick comes out of the center of your cupcakes clean.

*Let your cupcakes cool IN THE PAN for 10 minutes, then transfer to a clean work surface to cool completely.

Now! The sooner we make this frosting, the sooner you can enjoy these delicious cupcakes. So here we go!

Here’s what you’ll need:

  • 1 (8 ounce) package of softened cream cheese
  • 1/2 cup softened butter
  • 2 ½ cups powdered sugar
  • ½ teaspoon vanilla
  • 1/2 teaspoon of maple extract (or Maple syrup if you have it)
  • 4 slices bacon, crisply cooked, crumbled

In a large bowl, mix together your cream cheese, butter, and vanilla.

Then, mix in your powdered sugar a little at a time.

*When mixing in the powdered sugar, START YOUR MIXER ON THE LOWEST SPEED, then work your way up to medium speed. This way, you avoid being lost in a huge white cloud of sugar, and a huge mess.*

Once you’ve mixed in all your powdered sugar, stir in your bacon pieces with a spoon or spatula. Refrigerate your frosting until you’re ready to use it.

You can make these from your favorite pancake mix.

*To assemble*

Maple-Bacon cake, bacon cream cheese frosting, and topped with mini pancakes

Pipe on your bacon frosting for a clean finish. OR, spread it on with a spoon or spatula for a more “rustic” look.

Then just stack on your mini pancakes, you can “glue” them together with small dabs of frosting. And…ENJOY!
